We are not getting the emails that we used to get. See point 2 under ERROR ENCOUNTERED. I do have a question regarding the Checkout profile that I created. Does your plugin still use the WooCommerce mail settings:

 


 

 or do I need to duplicate these recipients inside the "MerchantEmail Recipients"?

Yes, you should be receiving emails. Please provide access to a staging environment with administrator access for us to review further.
